Marine cucumbers are promising sources of bioactive compounds with various health benefits.
They are a source of collagen, a protein essential for maintaining tissues, and are rich in taurine and saponin, which have an antioxidant function and a bleaching effect (in fact, they limit the formation of accumulations of melanin and mitigate sunspots). This ingredient also prevents damage to elastic fibers caused by free radicals or UV rays, thus protecting the skin from its aging. The oloturoid or oloturie, commonly «sea cucumbers», belong to the class of echinoderms, invertebrates characterized by the presence of a skeleton formed by calcareous spiny plates, such as the starfish and the sea urchin. The holothurs live in coastal zones but also in the greatest depths of the oceans. Hidden in the wet sand or in the crevices of the rocks, they roam on the bottom among the algae.
They can form very numerous populations, especially in depth: they make up half of the living forms at 4.000 metres and 90% at 8.000 metres. In the Mediterranean since 2018 their fishing is protected because recognized as fundamental to maintain the balance of the marine environment.
